To the Cooks of the Barony Marche of the Debatable Lands, the Canton of
Steltonwald, and the Shire of Sunderoak does Odriana vander Brugghe bid
greetings.

I have been in communication with the Penn State Allegheny County Extension
and would like to have one of their instructors come out and teach the
"Cooking for Crowds" class this Autumn, but need to get an idea of whether
or not this would be something that other people would be interested in
doing. To better explain what the class would be about, here is the
description from their website:

"Cooking for Crowds was designed to be used with non-profit audiences that
cook food for the public as part of food fundraisers. Although the target
audiences traditionally do not have professional training in cooking large
volumes of food for the public or access to commercial foodservice
equipment, they do take great pride in serving their customers terrific
tasting food.

This curriculum was designed to show non-profit groups the food safety
risks that develop when cooking large volumes of food and how to reduce
those risks so that the food the group prepares is both safe and delicious.
Although many of the food safety strategies recommended are similar to
those recommended to commercial food establishments, the strategies have
been translated into practical methods to meet the specific needs of
non-profit audiences."

In our area, we have been extremely fortunate to have a majority of cooks
who are familiar with safe food handling rules which has kept us all safe
from food borne illness for a very long time. Unfortunately, not every area
has been this fortunate and in order to ensure that we continue to handle
food safely, this kind of course would offer an opportunity for current
cooks to learn more and new information and for new and newer cooks, it
would give you a course in food handling that you will find very useful.

The cost of the class would be $15 and include course materials and a
certificate of completion.

Please contact me off list at jenn.strobel at gmail.com to let me know if you
would be interested in participating in this kind of class.

Best regards,

OVB
