Plywood is pretty stable, but you have to keep it dry. Warping often
occurs when one side is exposed to weather/humidity and the other not as
much. waterproof the entire thing and you'll be better off.

Possibly look into stressed skinned platforms. 
Really strong. Really light. 

Essentially a sandwich:
thin board, lattice , thin board.  Screwed and Glued.
you could probably get by with lauan on either side
(and strips of lauan as the lattice)
