Unless you actually want/need kerberos support in OpenSSL, you can just do:

export LOCALDEFS="-DOPENSSL_NO_KRB5"
./configure ...

You could also probably set CFLAGS and LDFLAGS to point 
to/usr/kerberos/[include|lib], but I haven't bothered trying it.
