Carolyn,
We have a set of video tutorials / demonstrations for Alice 3 currently available on our web site

although these may not be exactly what you are looking for. This is not a complete set by any stretch, and we are still developing and refining these, as well as finishing the textbook, which will have textbook specific videos as well.
