Thanks everyone for the help with these terms.  I was just stuck on my
assumption of the flat foot (why I explicitly stated it), and couldn't
see the movement for the trees. Hearing the more precise French
translations really helps too.

Probably not, that's why he's not the only dancemaster I'm looking at.
 But this little puzzle solved at least gives me an idea of what he is
saying, and brings his movements closer to the canary steps of the
italian dancemasters.
