Simply encouraging people to look at their partners can help a
lot. And for more effort, dancing the 15th century Italian dances that
act out a story is a good way to get people to think about
interacting.

Another twist on that theme is to use Guglielmo's exercise of dancing
the same dance several times with different music. Reacting to the
music, your partner, other couples, and the space you're dancing in
are all related skills.
