"I don't have any answers, but I certainly admire the question."  I've
wondered it too.  In Jane Austen's works -- yes, yes, way past period;
it's an analogy -- they have dancing, and I think the dances were
long, but no indication of when or how they learned the dances,
whether they were called, or anything.  Then again, she doesn't
mention how they learned needlework, singing, or anything else.
