Since Liam posted his lunch menu, I thought I would post my feast menu as well.

First Course

Bread and Butter
Cheese and nuts and fruit
Sallat
Chicken in lumbard mustard sauce.
Mushrooms and onions, cooked in broth with spices
Ymber Day tarts

Second Course --

Roast beef
Three Sauces
Pasta and Cheese
Peas and onion cooked in saffron
Compote (aka pickled sald)


Third course:

Apple pie
Gingerbread


Period Recipes


Salat. Take persel, sawge, grene garlec, chibolles, letys, leek,
spinoches, borage, myntes, prymos, violettes, porrettes, fenel, and
toun cressis, rew, rosemarye, purslarye; laue and waishe hem clene.
Pike hem. Pluk hem small wiþ þyn honde, and myng hem wel with rawe
oile; lay on vyneger and salt, and serue it forth. Forme of Cury.


Lumbard Mustard. V. Take Mustard seed and waishe it & drye it in an
ovene, grynde it drye. farse it thurgh a farse. clarifie hony with
wyne & vynegur & stere it wel togedrer and make it thikke ynowz. &
whan þou wilt spende þerof make it tnynne with wyne. Forme of Cury.

Funges. Take funges and pare hem clene, and dyce hem; take leke and
shrede hym small, and do hym to seeþ in gode broth. Colour it with
safroun, and do þerinne powdour fort. Forme of Cury.


Tart in ymbre day. Take and perboile oynouns & erbis & presse out þe
water & hewe hem smale. Take grene chese [brede AB] & bray it in a
morter, and temper it vp with ayren. Do þerto butter, saffroun & salt,
& raisons corauns, & a litel sugur with powdour douce, & bake it in a
trap, & serue it forth. Forme of Cury.

Sawse Carmeline. Take raysons of courance & kyrnels of notys & crustes
of brede & powdour of gynger,clowes,flour of canel; bray it wel
togyder and do þerto salt. Temper it up with vyneger, and serve it
forth. Forme of Cury

Verde Sawse. Take parsel. mynt. garlek. a litul serpell and sawge, a
litul canel. gyngur. piper. wyne. brede. vynegur & salt grynde it smal
with safroun & messe it forth. Forme of Cury.

Piper for Feel and for Venysoun. Take brede, and frye it in grece,
draw it vp with brothe and vinegre: caste ther-to poudre piper, and
salt, sette on the fire, boile it, and melle it forthe. Ashmole MS

Makerouns. Take and make a thynne foyle of dowh, and kerue it on
pieces, and cast hym on boiling water & seeþ it wele. Take chese and
grate it, and butter imelte, cast bynethen and abouven as losyns; and
serue forth. Forme of Cury.


Perry of pesoun. Take pesoun and seþ hem fast, and couere hem, til þei
berst; þenne take hem vp and cole hem thurgh a cloth. Take oynouns and
mynce hem, and seeþ hem in the same sewe, and oile þerwith; cast þerto
sugar, salt and safroun, and seeþ hem wel þerafter, and serue hem
forth. Forme of Cury.


Compost. C. Take rote of parsel. pasternak of rasenns. scrape hem
waisthe hem clene. take rapes & caboches ypared and icorne. take an
erthen panne with clene water & set it on the fire. cast all þise
þerinne. whan þey buth boiled cast þerto peeres & parboile hem wel.
take þise thynges up & lat it kele on a fair cloth, do þerto salt whan
it is colde in a vessel take vineger & powdour & safroun & do þerto. &
lat alle þise thinges lye þerin al nyzt oþer al day, take wyne greke
and hony clarified togider lumbarde mustard & raisouns corance al
hool. & grynde powdour of canel powdour douce. & aneys hole. & fenell
seed. take alle þise thynges & cast togyder in a pot of erthe. and
take þerof whan þou wilt & serue forth. Forme of Cury.


Tartys in Applis. Tak gode Applys and gode Spycis and Figys and
reysons and Perys and wan they are wel ybrayed colourd with Safron wel
and do yt in a cofyn and yt forth to bake wel.  Forme of Cury.


To make gingerbrede. Take goode honye & clarefie it on þe fere, & take
fayre paynemayn or wastel brede & grate it, & caste it into þe
boylenge hony, & stere it well togyder faste with a sklyse þat it bren
not to þe vessell. & þanne take it doun and put þerin ginger, longe
pepere & saundres, & tempere it vp with þin handes; & than put hem to
a flatt boyste & strawe þereon suger & pick þerin clowes rounde aboute
