GMail does something funky with labels rather than folders, I'm not
entirely sure how their POP works.
Exchange - what program are you using to talk to it? Again, I don't
have heaps of expertise with Exchange, but I would have thought you'd
be connecting with Outlook and using its own protocol rather than POP
to get full functionality.
Cyrus is natively an IMAP server (the project is called cyrus-imapd!)
and only talks POP as an afterthought. IMAP really is the best choice
for interacting with it.
Is there a reason why you want to use POP? Most clients are quite happy
to talk IMAP.
