The cyrus-imapd rpm uses saslauthd per default. You're right, the RedHat
cyrus-sasl rpms use shadow per default. To use PAM you still run saslauthd
but with different config:
[root at bla root]# cat /etc/sysconfig/saslauthd
MECH=pam
