Browse through doc/changes.html.  Some highlights:
-Uses SASLv2, which is much more stable than SASLv1 (though this is where
 the majority of your upgrade headache will be).
-Integrated Unix Hierarchy Separator ('/' instead of '.' as a mailbox
 seperator) and Alternate Namespace (user mailboxes are siblings to their
 INBOX) support
-Easy to configure database backends (as well as the addition of the
 skiplist backend)
-Murder support that actually works (okay, so this isn't a big deal for
 smaller sites ;)
-Improvements in all the associated utilities.
-A very large number of bugfixes and other improvements
