Yes, Dubheasa is apprenticed to me and yes, she's a fantastic baker who does fondant, but neither of us can give you a period fondant recipe.
Fondant is made of confectioner's sugar (which contains corn starch), water, and some form of gelatin or gum paste. It's generally cooked to the soft-ball stage
