I pretty much have to agree on all points of your observation, as well as the ethnic foods thing.
We go to great lengths when doing feasts to make period and good tasting food.....why is it so difficult to have something of that caliber at an event attended by so many who look for such?

someone has asked to open a bakery, but the coopers have not chosen him.
there may very well be a long line of people wanting to be food merchants, i
i do know that the new place, medieval munchies, is being run by the son of
the person who runs beast and boar. (still poking my sources for what they
are serving - i'll keep you updated ;)
it always seems to me, and this is ONLY me observing and i could be
completely wrong here, that we lose food merchant spaces run by sca
people... only to have them taken over by cooper run places. there used to
be a place called newts and stuff that sold pizza, and now we have a cooper
run place selling overpriced, not-very-good pizza and a horror called
walking nachos (chilli dumped into a bag of fritos- *shiver*)
phils grill went out (good food, they WERE bad to their employees, i'm not
arguing about them being thrown out or whatever, and i don't know if they
were sca or not) - we get another cooper store and $2 hotdogs in that spot.
at least when the portersville ambulance people were in that spot you could
get a decent lunch cheap.
this is just observation. not really complaining - i gave up the idea of
getting a cheap small lunch in the food court years ago. (i love delights of
cathay, but there is too much food for me for lunch and i hate to waste it
(don't like egg rolls ;) )
i DO wish that some sca person-owned establishment could open and serve
something interesting. or something 'ethnic' that isn't made so white bread
as to be to be unrecognizable ('fajitas' without sour cream or salsa
anyone?) or something not so totally mundane that you could find at a
sporting event....but i don't think the coopers are going to allow that -
and they control the merchant area and that is that.
