I think that the chocolate milk was pasteurized, though not
homogenized. The Fishers' raw milk venture was separate.

I don't know what breed of cows they had, but our milk currently comes
from Jerseys and if I leave it to separate, it's roughly 1/3 cream. We
have in the past gotten from brown swiss and that was somewhat less,
maybe 1/4 at the most. Holsteins are I think the most common breed of
dairy cow, and they have a notoriously low milkfat output (but higher
overall output, which is what makes them so popular I guess).

I'm very amused by the copycat recipes going around that say that you
have to add about a pint of heavy cream to a gallon of whole
storebought milk to get the correct consistency. Holy cow!
