Tomas and Rowan replied that they indeed were set on this course, but begged the boon of permission to hold one last court. Her Majesty did inquire once again if it was Their Excellencies wish to step down from the position of Landed Baron and Baroness. Their Excellencies did confirm that they were now ready to proceed on this path. Her Majesty did then take the territorial coronets of the Barony of Blackstone Mountain from Their heads, thanked them for their six years of steadfast service, and released them from Their oaths of fealty. Her Majesty seeing that the Barony was now without a leader summoned into court Baroness Gwenydd Olafsdattir, the seneschale of the Barony of Blackstone Mountain. Her Majesty questioned her if there were heirs to take up the coronets and lead the barony. Baroness Gwenydd replied that indeed an election had taken place in accordance with all Baronial Policies and Kingdom Laws, and that heirs had duly been selected by the populace. Queen Morgen thanked her for her diligent report. Her Majesty them called forward THLord Kieran MacUrsus called Kire and THLady Katherine Wert. Queen Morgen asked them, being duly elected to the office of Territorial Baron and Baroness if they were prepared to accept the responsibilities and undertake this task. Kire and Katherine did reply they they had given the matter much contemplation and knelt before Her Majesty prepared and willing to begin this task. Her Majesty then drew the bright gleaming Sword of State from its scabbard and received Their oaths of fealty to the Crown of Aethelmearc, and She did place the Baronial Coronets upon Their heads, investing Them as Their Excellencies Kieran MacUrsus and Katherine Wert 5th Baron and Baroness of the Barony of Blackstone Mountain, and invited Them to sit upon Their Thrones beside Her. Her Majesty explained that there had been some confusion in a matter and that she wished to clear the air in its regard. Here it is! --Bjorn Mini Quiche 1 pound Sausage 8 eggs, lightly beaten 1/4 cup milk or water 1/2 to 1 cup shredded chese (Cheddar, mozzarella or provolone) 1 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon olive oil or butter 1/2 cup thinly sliced green onions 1/2 cup diced sweet pepper (optional) 1 cup thinly sliced mushrooms or yellow squash (optional) 1/4 cup Parmesan cheese (optional) Preheat oven to 350?F. In a large mixing bowl, combine eggs, milk or water, cheese, salt and pepper. Set aside. Heat olive oil or butter in a large skillet; saute onions and any other optional vegetables desired until tender. Add vegetables and sausage to egg mixture. Stir well. Place 12 foil baking cups into cupcake pan. Distribute sausage and egg mixture into baking cups. Bake for 22 minutes or until eggs are set. Remove from oven. Sprinkle with Parmesan, if desired. Variation: Can Substitute 1 10 ounce package frozen spinach for sausage. Thaw spinach.. Squeeze out all exces water. Do not cook with optional vegetables. Add 1/4 teaspoon nutmeg. Can also put in mini cupcake pan and have for appetizers. Would make approximately 48 appetizers. It was really excellent, with a broad range of very interesting classes, delicious lunch, and a wonderful site! There was a museum room with internet access, a learning annex (further away, but a good room nonetheless), and the best part - two classrooms were in the fort! Period (OK, not our period, but close enough) log cabins with the heat coming only from the fireplace. It was just beautiful attending classes in those two buildings - real "living the dream" moments. Plus I got to wear all my warm garb than I never get to wear! Yay! Thanks again! Second, if you've "scrapbooked" program books from events, taken photos or film footage at events, been inspired to compose prose, poetry, or song, be it a local demo or Pennsic this past year, I encourage you to share these with your friends and neighbors at meetings, practices, demos, and events or even through your local DL's, e-groups, and web-sites in accordance with their protocols. Now... As we turn the page from December 2008 to January 2009, we reach a milestone in AEthelmearc's existence... We mark the 20th Year of Our Creation as a Principality of the East Kingdom. When I joined the Society in 1987, I got to sit in several meetings of the Principality Committee dealing with a variety of topics from laws to heraldry. Some were already peers [Mistress Arianna of Wynthrope and the late Baroness Michaele del Vaga]. Most everyone else who I got to know at those meetings have since gone on to be venerable peers of these Sylvan Lands [Syr Hak, Viscount Bear, Viscount Haakon, Viscountess Eleanor, Baron Fridrikr, Baroness Orianna, Sir Maghnus, Mistress Marian Greenleaf, Their Graces- Morguhn, Rowan, and Meirwen, Baroness Rhiannon the Curious, etc.]. Their work culminated 20 years ago when Countess Aiden, who was then East Kingdom Seneschal, allowed the Western and Southwestern Regions of the East Kingdom [being the Barony-Marche of the Debatable Lands, the Baronies of Thescorre, the Rhydderich Hael, and Delftwood, The Dominion of Myrkfaelinn, The Shires of Riversmeet, Gaidheulach Dorchadh (Misty Highlands), Nemoralis Nocturna (the current location of Gryffon's Keep and Westland Mor), St. Swithin's Bog, Stormsport, Sterling Vayle, and Coppertree, along with the Canton of Beau Fleauve and the College of Cour d'Or] to be polled as to whether its members wanted to form a Principality, with Names of either "The Lakes" or "AEthelmearc." The polling began to be distributed at the Western Region 12th Night in the Rhydderich Hael on January 14th. By the end of that February, the replies were received by Countess Aiden who announced the results at Ice Dragom XIII on March 18th at the end of the Court of Randal II and Katherine I. That result was in the affirmative, with the name "The Lakes" and that which would become our current arms being approved by the populace for submission to Brigantia and Laurel Sovereign. [It should be noted that "The Lakes" was later found to be "in conflict" under the Society's naming practices under Laurel Sovereign at Arms. Hence, we went to the runner-up "AEthelmearc" which was then approved by Laurel Sovereign.] On April 15th, at the Coronation of Morguhn III and Maurya in the Shire of Bergental, They appointed Mistress Cassadoria Finialla, who had recently completed her term on the Society's Board of Directors, to be our Lady Protectress until such time as our First Prince and Princess could be chosen and invested. On July 22nd, the Society's Board met in Cynnabar [Ann Arbor, MI] and after discussion, unanimously approved our Petition to Form a Principality. At Pennsic XVIII, we held our 1st tournament and also saw two of our subjects, Lord Maghnus de Cnoic an Iora and The Honorable Lord Bear the Wallsbane sent to vigil, whereafter they accepted the belts, spurs, and chains of Knighthood. On September 23rd, in the Barony of Thescorre, midst the remnants of Hurricane Hugo, did Morguhn and Maurya, along with Their Heirs- Horic and Lea, as well as The Lady Protectress, oversee our 1st Coronet List of 26 entrants and their consorts. As the cold rains continued to mark our birth, the list was whittled to two- Lord Haakon Oaktall, vying for his lady-wife- Lady Eleanor of Waldren AND Tarbald Celerius, vying for Cainder of Loch Suili. In a best of three finals that went the distance, Tarbald won the Coronet for Cainder. At Court, several who now are peers, including Yngvar the Dismal and Alison of the Many Isles, received their Awards of Arms, Lord Morien ap Rhys o Caerdyf received a Grant of Arms, and Lady Glynis Ciara of Trawsfynydd [this writer's sister] was inducted into the Order of the Laurel for her efforts in the field of calligraphy and illumination. On December 2nd, in the Barony of the Rhydderich Hael, Horic and Lea released Mistress Cassadoria from the burdens of Lady Protectress so that Tarbald and Cainder could be invested as our 1st Prince and Princess. At Their First Court, Tarbald and Cainder presented AEthelmearc's 1st Awards of Arms to Aoibhel of Dun Holen and Ragnarr of Elandris respectively. Also, Their Majesties created Bedawyr of Avaricum, Baron of the Rhydderich Hael at that time, a Knight of the Society. In other words, this is a year that we should find ways to celebrate these occasions during the course of our events. Whether it be bringing out photos from that year so that we can say "Zounds! Did I look like that?," or commit to pen or keyborard our tales of that year in our time in the Society, or even bring out our regalia of that time to display at events, these are things that I would encourage our branches to do. Sorry, but this is not medieval, and I doubt that it is a pudding. It calls for potatoes and paprika, both of which are new world species and were not known in Europe during the middle ages. It also calls for a northern Italian cheese in a German recipe, and back then cheese would have been expensive to transport across the Alps, so I think that few (if any) Germans would have used that cheese except for the few living south of the Alps. As for whether it is a pudding: it has no blood, animal fat, or organs, no liquid ingredients except for some eggs and a bit of oil, and no grain. At the least, that means that it does not resemble most kinds of puddings that I have ever heard of. We did it because *Jean Cubbage *of Swissvale requested a "really good" recipe for pizzelles and you, our readers, responded with dozens of "really good" recipes. Unfortunately, we can't print every recipe. The first thing we did was decide which recipes we would use. We made it simple -- we chose the readers' recipes that purported to be the *best*. After we tested and tasted, we heartily agree -- they are great. We tested six recipes and though all the pizzelles look the same, they don't come close to tasting the same. We made pizzelles that are as light as a feather and pizzelles that tease the palate with hints of whiskey and rum and lemon and orange and, of course, anise. We could not decide which pizzelles we liked best. The batter for pizzelles is easy to make and takes only 10 minutes or so to prepare. But baking this cookie is time-consuming. The pizzelle iron bakes only two cookies at a time. The average baking time is between 30 and 60 seconds depending on the size of the iron. Our pizzelle iron makes two 4-inch round pizzelles. The cookies were ready in 30 to 35 seconds. But if you're using the larger iron, they may take a few more seconds. Because we used the smaller iron, naturally we got more cookies per recipe. We placed the hot pizzelles on a cooling rack and then stored the cooled cookies in tins lined with wax paper. Included with today's recipes are fun ideas on how to turn a pizzelle into a scrumptious dessert -- with little effort. Everything has a history, and supposedly, pizzelles originated in ancient Italy. Ancient pizzelles were baked over an open fire in irons embossed with a family or village crest. Pizzelles were baked to mark certain celebrations, according to www.edgecraft.com. The tradition is carried on today as pizzelles are baked for holidays and weddings. Kitchen Mailbox received a response from *Dolores Hart* of South Side: "The mini pizzelles are made with raspberry preserves and a dark chocolate bar. You can use any nuts you like." Here's what Kitchen Mailbox did to duplicate this cookie: While the pizzelle was warm and still pliable, we rolled it into a tube shape and set the cookie aside to cool. Meanwhile, we made the chocolate and raspberry filling. Over medium heat, we melted 2 cups semisweet chocolate chips with 1 tablespoon butter, then added 4 tablespoons raspberry preserves and mixed to combine flavors (at this point 1/2 to 3/4 cup chopped nuts may be added). Using a pastry tube, we filled each pizzelle with the filling. And here's a variation from *Elaine Kray* of Munhall: Roll warm pizzelles into a tube. Let cool. I don't actually have a pizzelle recipe to add to your collection. What I *do* have are 14th century recipes for wafers (I don't have them at hand, but they're out of _Savoring the Past_, which is a history of French cooking that has some redactions in the back of the book). One version calls for sugar, and the other for honey; both are flavored with rosewater, rather than anise. They actually take a lot less time to make than the ones posted here (about 15-30 seconds once both sides of my electric pizzelle iron is primed, so they don't burn). The iron gets lubed up each time, even though it's got a non-stick surface. I can usually crank out a double batch (about 5-6 dozen) in an afternoon, although I have to make sure I have my watch handy on the counter (the problem with electric timers is that you can't count seconds too well). I saw pizzelles getting made on a cooking show on PBS a few years ago; the batter being used there was a LOT stiffer than the one I make for the wafers (I forget the actual French term for the sugar ones -- IIRC, the honey version are called "oubliettes"). At some point I may have to actually replace the iron with a newer one (it was a wedding present from an SCA friend of Alastar's and mine in the East Kingdom, and it has gotten a lot of use over the years for events). I took me a few minutes to figure out what they were (not having much more than high school French and that too many years ago). These things were huge! The irons were the size of dinner plates with handles that made them almost as tall as me. I didn't get a real close look at the designs on the irons themselves but they looked pretty elaborate. The sugar wafers are called _Petit Mestiers_ and the honey ones are called _oublies_. The recipe is originally from Nicolas de Bonnefons, _Les Delices de la campagne_ (1679). The redactions are by Barbara Wheaton, the author of _Savoring the Past_ (she also includes the original French receipt). Turns out the redaction didn't call for rosewater after all -- there's also an earlier recipe in the same book, from Michel de Nostradamous for Marzipan Tarts, in which you make rosewater-flavored marzipan and coat the wafers with it, then make a glaze of orange juice, orange rind, eggwhite and sugar. I think I may have made the wafers at least one time with rosewater, though. 1-1/4 cups of either sugar or honey 1 cup water (7/8 cup for the honey version) 2 cups unbleached all-purpose flour 1 large egg 2 Tbsp melted butter Dissolve sugar or honey in water, and gradually beat most of it into the flour, till it's the consistency of heavy cream. Add the egg and beat till smooth, then add the melted butter and any remaining sugar or honey water if needed. Heat the wafer iron and brush with cooking oil (the redaction also suggests using fat rind from unsmoked bacon, but I've always used peanut oil or canola oil, and wiped it on with a paper towel). Cook a sample and add more water if the batter is too stiff or a little more flour if too runny. Cook to a golden tan (on my electric pizzelle iron, it generally takes 15-45 seconds after closing -- I watch the little light go off and on) and remove with a pointed knife. Make sure they don't burn (they cook really quickly, because they're thin). The redaction says to roll the wafers into a cylinder, but I generally keep them flat. Cool on wire racks. Store in a dry place. When they're cool enough I tend to stack them up to make more room on the racks. I don't remember what brand my pizzelle iron is -- it's over 20 years old at this point, and has gotten a fair amount of use over the years, but still seems to work okay (although the thing seems a little rickety at this point, especially the clip on the handle that you're supposed to use to close it). It makes two at a time (the designs on the top and bottom of one side are swapped on the other). You have to close it up between each set, to get it back up to temperature, but it's pretty easy to get into a rhythm. The last time I considered getting a replacement pizzelle iron was a couple of years ago, and the prices seemed to be in the $40-$60 range, depending on the store, brand, and whether they made two or four at a time. I seem to remember seeing at least one that you could put different plates on in order to get different designs. Would it be too much trouble to look up the marzipan tarts recipe too? Coating the wafers with marzipan is a daunting prospect, having never worked with marzipan or wafers (pizzelles, yes). How would one do that? Wouldn't the marzipan be thick and hard to spread?
