   The meatballs are beef and the only pork is in the last course of the pork loin. 
  The cook does not use lard.

  The only adjustments I will make are for seasonal availability and quality as to exact content for fruit and vegetables. Like if grapes are awful we will go with apples and cinnamon sugar.
