[SCA-AE] How do you make this hat?

My understanding is that it is a mutated hood.  There is a genearl 
pattern in the Medieval Tailor's Assistant.  It basically looks like a 
14th c. hood but with a very short lire pipe (a few inches at most - if 
any), a small collar part, and totally open in the front.  The hood 
part is extended in the front and then folds back to get that wing-y 
look on the sides of the head.

That's the take of a person who mostly looks at pictures and tries to 
figure out what is going on.  I _know_ there are more astute costuming 
researchers out there who could be of more help!
