Becuase postfix performs best with data=journal which is not good for
the rest of the var partion which should be data=ordered

Probably, but RedHat (the distro he mentioned) does not officially
support reiserfs. However it can at install time  if you have pass
"linux reiserfs" option to anaconda during install for RedHat
